Super Simple Homemade Granola – It’s Good For You Too!

I've always been a bit intimidated to make my own granola, until I realized how easy it is!

Full of good fibre and healthy fats, granola is (or rather, can be) a nutritional powerhouse.

Unfortunately, the stuff you find in the grocery store is often laden with sugar and not so good for you ingredients. Note: If you can't pronounce an ingredient on any label, don't buy it.

Made from scratch and ready in 20 minutes, this stuff is a whole different story.


Homemade Maple Almond Granola

Prep time 10 minutes
Cook time: 10-12 minutes

Ingredients

2 cups raw whole rolled oats
1/2 cup raw almonds
1/4 cup raw pumpkin seeds
1/4 cup raisins (preferably organic)
2 tbsp grade B (or No. 3) maple syrup
2 tbsp melted coconut oil
1/4 tsp vanilla extract
1/4 tsp cinnamon or nutmeg (optional)
pinch of fine sea salt

Directions

Preheat oven to 300F

Mix all ingredients in a large bowl. I like to use a wooden spoon but if you're prepared to get messy go ahead and use your hands.

Spread raw granola mixture evenly on a baking sheet

Bake for 10-12 minutes, until lightly browned

Enjoy warm out of the oven or allow to cool before serving

Once fully cooled, store your delicious creation in an airtight glass container or mason jar. It will keep for about 2 weeks if kept in a cool, dry place.


Notes:

-I can't take credit for this recipe - it was inspired by this post from Elizabeth Rider

-Because granola is jam packed with so much goodness, a little goes a long way. A serving size of this deliciousness is about a 1/4 cup. Eat it as is, or serve with organic greek yogurt or in a bowl with a bit of almond milk.

-Make sure to use whole rolled oats, as quick or instant oats contain far less fibre and are therefore high glycemic (read: bad for your waistline).

-Whole, chopped or slivered almonds would all work well in this recipe. I like to throw whole almonds in my food processor for a few seconds until they are partially chopped. Whatever floats your boat!

-Play around with these ingredients. If raisins aren't your thing, try dried cranberries, or leave the dried fruit out altogether. Same goes for the nuts and seeds as well - get creative!
